Or you can fry them. -Keep aside to cool down so they are easy to work with. 3-How to prepare the Eggplant Rolls Dish. -Preheat the oven to 375 F. -Cut 1 large tomato, 1 green pepper, 1 onion and a few garlic gloves into big pieces. -Mix 1 can of tomato sauce ( 8 oz/1 cup) with 1 ½-2 cup of water, 2 Tbsp oil and season with salt, black pepper and hot red pepper to taste. -Roll up one slice of eggplant with one sausage. -Arrange eggplant rolls seam side down in a deep baking dish that is brushed with olive oil or any oil. -Distribute tomato, green pepper, onion and garlic pieces in between eggplant rolls. -If you end up with extra sausages, you can add them in between as well. -Sprinkle 1/2 cup chopped parsley on top. -Pour tomato sauce all over eggplant rolls equally. -Bake for 30 minutes or until brown or until the vegetables are tender and the sauces is thickened. -Serve with white rice or with bread.
